Bread & Butter Pudding

Ingredients

  • 4 large eggs

  • 150 g caster sugar

  • 150 ml fresh milk

  • 450 ml fresh cream

  • Zest of 1 orange

  • ½ tsp vanilla essence

  • 1 Granny Smith apple

  • 1 tbsp raisins

  • 5 seedless dates, chopped

  • 9–12 slices white sandwich bread

  • Ground cinnamon, to taste

  • Icing sugar, for dusting


Garnish (Optional)

  • Vanilla sauce or vanilla ice cream

  • Strawberry compote

  • Fresh mint leaves


Method

  1. Prepare the fruit

    Peel and core the apple, then slice thinly. Set aside.


  2. Prepare the bread

    Cut the white bread into cubes and set aside.


  3. Make the custard

    In a bowl, whisk the eggs and caster sugar together until the sugar has dissolved. Do not overwhip or incorporate air.


  4. Add liquids and flavoring

    Stir in the fresh milk, fresh cream, orange zest, and vanilla essence. Mix until well combined.


  5. Assemble the pudding

    Add the bread cubes, sliced apple, raisins, and chopped dates into the custard mixture. Gently fold using a wooden spoon until evenly coated.


  6. Transfer to baking dish

    Pour the mixture into a heatproof baking dish and level the surface.


  7. Bake

    Bake in a preheated oven at 175°C for 25–30 minutes, or until the pudding is set and lightly golden on top.


  8. Serve

    Dust with icing sugar just before serving. Serve warm, topped with vanilla sauce or vanilla ice cream, strawberry compote, and fresh mint leaves.
