Natural Delight Medjool Date & Walnut Cake

Ingredients
Cake
225 g self-raising flour
60 g cold butter, cubed
60 g sugar
120 g walnuts, chopped
120 g Medjool dates, chopped
90 ml golden syrup
90 ml milk
1 egg, lightly beaten
Cream Cheese Icing
200 g full-fat cream cheese, softened
150 g butter, softened
300 g icing sugar, sifted
Zest of 1 lemon
1 tsp vanilla extract
Method
Preheat the oven
Preheat the oven to 180°C. Grease and flour a loaf tin.
Prepare the dry ingredients
Sift the self-raising flour into a large mixing bowl.
Rub in the butter
Add the cold butter cubes and rub them into the flour using your fingertips until the mixture resembles fine breadcrumbs.
Add sugar
Stir in the sugar until evenly combined.
Add nuts, fruit, and liquids
Mix in the chopped walnuts and dates. Add the golden syrup, milk, and beaten egg.
Mix the batter
Stir gently until all ingredients are just combined and a thick batter forms. Do not overmix.
Bake
Transfer the batter into the prepared loaf tin and level the surface. Bake for 50–60 minutes, or until a skewer inserted into the center comes out clean.
Cool
Remove from the oven and allow the cake to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely before icing.
Cream Cheese Icing
Beat the cream cheese and butter together until smooth and creamy.
Gradually add the icing sugar, mixing until light and fluffy.
Stir in the lemon zest and vanilla extract.
Spread evenly over the cooled cake before serving.
